Which competitor has performances that are all over the place in the duration of every Sasuke tournament they competed in.

Shingo for doing worse in every subsequent Stage 3 attempt despite training for the show on a daily basis and not being that old (late 20s to early 30s).
Nagasaki for a similar reason, going through a really gradual but clear decline from Sasuke 33 to 38. Two Stage 3 attempts, followed by Stage 2 fails on obstacles he’d passed, followed by 3 Stage 1 fails on obstacles he’d passed (given that his fail in 37 was on the non-reverse portion of the Fish Bone Kai).

Ryo comes to mind. For a while it seemed like he might've had a legit shot at Kanzenseiha, but then after 30 he hit a rapid decline and while he did come close to the Final in 36, he regressed to not being able to do a single Salmon Ladder that even Snow Man did better on. After 38 though I think it's safe to say he's past his peak. Mainly due to not being in it mentally, but he's also gotten really out of shape physically.

I don't think Ryo's track record was that weird. It all makes sense imo.
Like most Unlimited Cliffers he had an affinity for only really training Stage 3 while ignoring his lower body strength hence he failed Stage 1 in his earlier career. I'd argue his success in 27-30 was perhaps influenced by the relatively easy Stage 1 difficulty throughout those tournaments as well as his increased encouragement once he started doing well.
Then 31 comes around and he's got the pressure of wearing #100 as well as his near-Kanzen in the previous tournament. All eyes are on him to be the one to win it all, but unfortunately the Tackle+Warped Wall was implemented specifically to take guys like Yuuji and Ryo out (due to the course arguably being too biased towards smaller, lighter Stage 3 specialists). It was a modification he obvs couldn't have trained for, but him failing Stage 1 in the tournament where everyone was expecting him to win was clearly disheartening, massively exacerbated by Yusuke effectively robbing him of Kanzenseiha.
Then 32 comes around. Ryo is still clearly demotivated by what happened in 31, as well as now doubting his ability to achieve Kanzen again given the OP new Stage 3. He probably felt at that point that he'd missed what could've been his only chance at victory, so he just kinda gave up, stopped training as much, and went into a phase of denial. The lack of training and mental block led to him slipping into his Stage 1 drought which he's arguably never truly recovered from. 36 I'd argue was due to there being no changes in the course since 35, while his fail in 38 was due to him rushing into the Salmon Ladder while still dizzy.
Hence I wouldn't say Ryo's track record was necessarily anything out of the ordinary. Shingo's Stage 3 decline was much stranger given how much he traiend for the show (unlike Iketani who's similar decline could simply be attributed to lack of training) while Shunsuke's recent performances (34 onwards) almost came across as though he was trying to fail on purpose. He obviously wasn't, but his last five fails have all just been like 'why....'.

Another one I would say is Kawaguchi. Especially in these last two tournaments. Beats the Cliffhanger only twice out of five attempts on it, and then follows that up with two Warped Wall fails (with the second one arguably being worse).

The Cliffhanger fails I don't think are that strange. We've seen so many competitors do the 180 transition in practice but constantly fail in competition due to pressure and/or sapped stamina (I mean Asa got a '100%' clear rate in practice yet still failed it 4 times in a row). There's so much of an element of luck that even clearing it twice out of five attempts is pretty impressive.
The Warped Wall fail in 38 was definitely strange though; 37 was obviously attributed to bad weather as even Yusuke who ran right after him failed there, but 38 I didn't really get because he'd clearly been practicing after his first fail, yet just seemed to use the same failed tactic as he did in 37. He didn't run up high enough and instead relied on jumping which once again didn't work, and similar to 37 he spent so long psyching himself up that despite having 30 seconds left he only allowed himself like 2 attempts. I honestly didn't get why he was so shocked/disappointed that he failed the wall again, having used the exact same tactic that caused him to fail the wall in the first place.
